How to do it

Why bakers and custard-makers scald

Scalding does a few useful things at once. It denatures a whey protein (beta-lactoglobulin) that otherwise weakens the structure of breads and the set of custards — which is why old bread recipes call for scalded milk for a softer, taller loaf. It speeds recipes by getting the milk hot before it's combined, and it dissolves sugar and extracts flavor from anything steeped in it, like vanilla beans. Historically, before pasteurization, scalding also killed bacteria and deactivated enzymes that would sour the milk or interfere with cheese-making. With today's pasteurized, homogenized milk, those enzyme-and-bacteria reasons are largely obsolete, so scalding is now mostly about speed, dissolving sugar, and infusing flavor (the protein benefit still applies, but matters less). Pulling it just under the boil matters because actually boiling milk drives off water, can scorch the lactose on the pan bottom, and may curdle the proteins.
