Checking the Lid Seal (Vacuum Test)
Verifying a canning jar lid has sealed under vacuum so the preserve is shelf-stable and safe.
Seal checking confirms that a processed canning jar has formed a proper vacuum seal as it cools, indicated by a lid that is concave and does not flex when pressed. A good seal keeps out air and microbes, making the preserve shelf-stable; an unsealed jar must be refrigerated or reprocessed. The check is a final safety step after water-bath or pressure canning.
After a jar of preserves cools on the counter, a quiet change takes place inside it: the food and the small pocket of trapped air contract as they cool, creating a partial vacuum that pulls the flat lid down tight against the rim. The lid-seal test, sometimes called the vacuum test, is how a home canner confirms that change has actually happened — by feeling, looking at, and listening to the lid to see whether a vacuum has formed. It is the final checkpoint of any canning run, the moment a cook learns which jars are ready for the pantry and which need attention.
A good seal keeps oxygen out, and without oxygen the molds and aerobic spoilage organisms that would otherwise break down the food cannot grow. But the test has a clear boundary: it proves only that a vacuum exists, not that the food inside was processed correctly. A perfectly sealed jar of under-processed green beans is still dangerous, because Clostridium botulinum spores survive without producing gas, off smells, or a bulging lid. Treat the lid test as confirmation of a well-followed recipe, never as a substitute for correct processing time, headspace, and acidity.
The practice is nearly as old as home canning itself. Before John Landis Mason patented his namesake jar in 1858, home canners relied on pour-and-set wax seals inspected by eye, and it was not until Alexander Kerr patented the two-piece metal lid in 1915 that the modern press-and-button test became the standard. Today's Ball, Kerr, and Bernardin lids all build a visible indicator into the center of the disc, so the canner is essentially reading a gauge that the manufacturer has installed.

How to do it

Let the jars cool undisturbed
Set processed jars on a towel or cooling rack, spaced so air circulates around each one. Leave them alone for 12–24 hours — do not press, tighten, carry, or move them while the vacuum is still forming.

Confirm the jars are fully cool
Touch a jar in the middle of the batch with the back of your hand. If any warmth remains, give it more time. Testing a warm jar can read as sealed when it is not, or disturb a seal that is still forming.

Loosen and remove the screw bands
Unscrew each band and set it aside. Bands are not part of the seal — they only hold the lid in place during processing. Storing jars without bands makes any later seal failure visible and lets air reach a compromised lid.

Press the center of each lid
With a clean, dry finger, press firmly on the middle of the flat lid. A properly sealed lid is rock-hard and will not flex, bend, or click. Any movement or pop means the seal did not form.

Check the lid's appearance and the indicator button
Look at the lid from the side at eye level: it should curve downward (concave) and sit flush against the jar rim. On Ball, Kerr, or Bernardin lids, the central button should be down and stay down when you release it.

Optional tap test
Tap the flat lid gently with a spoon or knuckle. A sealed lid rings; an unsealed one gives a flat, dull thud. Treat this as a secondary check — sound alone can be misleading on a damp or greasy lid.

Handle failures immediately
If a jar failed to seal, do not store it at room temperature. Either (a) reprocess the contents in a clean jar with a new lid within 24 hours, (b) refrigerate and use within a few days, or (c) freeze in a freezer-safe container.

Label, wipe, and store sealed jars
Wipe lids and jars clean, label with contents and date, and store in a cool (50–70°F / 10–21°C), dark, dry place. Keep screw bands off until you are ready to open the jar.
What the seal test does — and does not — tell you
The lid test is a check on physics, not on microbiology. A vacuum forms because the contents cool and contract; the lid is pulled inward by the pressure difference between the jar and the room. If that vacuum has formed, the seal is mechanically sound. It tells you nothing about whether the food reached the temperature needed to kill pathogens, whether the acidity is high enough to suppress them, or whether headspace was correct. - A sealed lid is necessary but not sufficient for safe low-acid canning.
- Bulging lids, hissing on opening, spurting liquid, or off odors always mean spoilage regardless of how good the seal looks.
- A jar that lost its seal in storage may still be safe if found quickly and reprocessed; a jar that was never sealed properly was never safe in the first place.
Reading the indicator button correctly
Modern metal canning lids have a small raised dimple in the middle that doubles as a built-in gauge. As the jar cools, atmospheric pressure pushes the dimple down; if the seal has formed, the dimple stays down permanently. If the seal is weak or absent, the dimple will pop up and down when pressed. A dimple that is down at hour 12 but pops up at hour 24 is telling you the seal failed late — do not store that jar at room temperature.

- Button up, or button that moves = no reliable vacuum.
- Test the button with the same finger-press used for the plain press test.
Common uses
Tips & pitfalls
- Wait the full 12–24 hours before testing — jars that are still warm can give a false 'sealed' reading because contents are still contracting and pulling the lid down.
- Do not press on the lid during cooling; the seal is still forming and can be disturbed by a curious finger.
- Remove screw bands after confirming the seal; storing jars without bands lets you catch a later seal failure, since a tight band can hold a failed lid in place and mask spoilage.
- If a lid did not seal, do not simply retighten the band — that does not create a vacuum. Either reprocess with a fresh lid or refrigerate or freeze the food.
- Wipe jar rims clean before the first lid goes on; food residue (grease, seeds, syrup) on the rim breaks the seal and is the most common cause of failure in an otherwise sound batch.
- Headspace matters: too little causes food to siphon onto the rim, too much leaves excess air and can prevent a strong vacuum — follow the recipe's headspace call exactly.
- Never reuse flat single-use metal lids for canning; the sealing compound deforms on first use and will not reseal reliably, even if the lid looks fine.
- Discard (do not taste) any jar that hisses on opening, spurts liquid, smells off, shows mold, or has a lid that bulges — the seal test is not a guarantee against every type of spoilage.
