2% Reduced-Fat Milk
Reduced-fat milk that keeps body without whole milk's richness. Fine for most baking and sauces; in custards or béchamel expect a slightly thinner, less luxurious result.
Two-percent milk is whole milk with roughly 38% of its fat skimmed off after separation, then recombined and homogenized so the remaining cream stays in suspension. What survives the skimming is what matters in the kitchen: the protein (about 8 g per cup, the same casein-and-whey profile as whole milk), the lactose, the calcium fortification, and the water-soluble vitamins are essentially untouched. That is why 2% performs almost identically to whole milk in most baking and sauce work — tenderness in cakes, set in custards, body in béchamel all lean on protein and starch more than on fat.
Where 2% falls short is in applications that depend on fat for structure or mouthfeel. It will not hold a whipped peak, will not churn into butter, and produces a thinner, less satiny cream sauce than whole milk or cream. The proteins also scald faster because there is less fat insulating them from direct heat, so a gentle hand on the stove matters.
For everyday cooking — coffee, cereal, oatmeal, pancake batter, a quick pan sauce — 2% is the quiet workhorse of the dairy case. Reach for whole milk or cream when the recipe is selling richness; reach for skim when calories are the point. Two-percent lives in the middle, and most weeknight recipes are designed around it without ever saying so.

Why 2% works almost everywhere whole milk does
Most of what milk does in a recipe is structural, and structure lives in the protein and lactose, not the fat. Cakes and muffins get their tender crumb from gluten development moderated by milk proteins and from the Maillard browning of lactose. Custards and pastry creams set because casein proteins coagulate at a specific temperature. Béchamel thickens because a starch-thickened milk sauce relies on gelatinized starch granules, not on fat. In all of those jobs, the difference between 2% and whole is small enough that most cooks will not notice it.

Where 2% is the wrong tool
Fat is not optional in three jobs: aeration, emulsion stability, and that glossy, clinging quality of a finished cream sauce. Below roughly 30% fat, milk will not hold an incorporated air network long enough to whip. In a hot pan sauce, fat globules keep dairy proteins from clumping and keep the sauce emulsified; less fat means a sauce that breaks or turns grainy more easily, and that feels thinner on the tongue. The fix in both cases is usually a small amount of cream or butter, not a different milk.

- In custards, ice cream bases, and pastry cream, compensate for the missing fat by stirring 1 to 2 tablespoons of heavy cream into each cup of 2% — it lifts body without diluting protein or lactose.
- Do not expect 2% to whip. Even with effort, it maxes out at soft, loose froth; reach for heavy cream or half-and-half for any aeration work.
- It will not churn into butter either; butter-making needs at least about 35% fat, which only heavy cream delivers.
- When making béchamel for a gratin, lasagna, or a cream soup where mouthfeel matters, bump the butter in the roux by about 25% or finish the sauce with a small pour of cream.
- Heat gently over medium-low and stir often. Lower-fat milk scalds and scorches faster than whole milk because there is less fat insulating the proteins, and scorched milk will ruin a sauce.
- In most cakes and muffins, do not bother adding butter to 'fix' 2% — the protein, not the fat, drives tenderness, so the result is already close to whole-milk territory.
- If a recipe calls for buttermilk and you only have 2%, sour it: 1 cup of 2% plus 1 tablespoon of lemon juice or white vinegar, rested 5 to 10 minutes until it curdles slightly.
- Freeze 2% in 1-cup portions (silicone molds or freezer bags laid flat) for cooked use later; thaw and shake or whisk vigorously to re-emulsify the separated fat.
