Method
Pat chicken thighs completely dry with paper towels. Season both sides generously with salt and black pepper.
Wrap each chicken thigh with 2 bacon strips, wrapping tightly and overlapping slightly. Secure with toothpicks if needed. Set aside.
Preheat oven to 200°C (400°F). Place a cast iron skillet over medium-high heat and allow it to get very hot.
Place bacon-wrapped chicken thighs seam-side down in the hot skillet. Sear for 5-6 minutes until bacon is golden and crispy, then flip and sear the other side for 3-4 minutes.
Add lemon juice and stir to combine. Simmer for 1-2 minutes until slightly reduced.
Slice chicken thighs into thick pieces. Drizzle the lemon butter sauce generously over the top. Garnish with fresh parsley and serve immediately.

Cooking Temperature
Chicken must reach minimum internal temperature of 74°C (165°F) with juices running clear before consumption. Use a calibrated meat thermometer inserted into the thickest part of the thigh, avoiding bone contact.
Preheat cast iron skillet until very hot before searing to ensure proper bacon crisping and render fat safely without sticking.
Cross Contamination
Use separate cutting boards and utensils for raw chicken and ready-to-eat ingredients. Wash all surfaces, hands, and tools with hot soapy water after handling raw poultry.
Avoid contact between raw bacon-wrapped chicken and other foods during preparation and plating stages.
High Risk Population
Poultry and bacon are high-risk foods for bacterial contamination (Salmonella, Campylobacter). Extra precautions required for pregnant women, young children, elderly, and immunocompromised individuals.
Storage
Refrigerate leftovers within 2 hours of cooking. Store in airtight containers at 4°C (40°F) or below for maximum 3-4 days.
Reheat leftovers to internal temperature of 74°C (165°F) before consumption. Do not leave at room temperature for more than 2 hours.
Handling
Allow cast iron skillet to cool before washing to prevent thermal shock and injury. Use oven mitts when handling hot cookware from oven.
Hot bacon fat and butter sauce can cause severe burns. Use long tongs when flipping chicken and allow sauce to cool slightly before drizzling.
Equipment Safety
Secure bacon wraps with toothpicks and warn guests before serving to prevent choking hazard. Remove toothpicks before consumption or indicate clearly on plated dish.
Pro Tips
Technique
Get that cast iron screaming hot before you add the chicken — you want a hard sear, not a steam bath. If the bacon sticks to the pan, you're not letting it heat up enough first.
Substitution
Turkey bacon works if you're watching saturated fat, but honestly? Go full-fat pork bacon here. The fat renders into the pan and bastes the chicken as it roasts. That's the whole point.
From the chef
When I first went keto, I missed the richness of carbonara and cacio e pepe. These bacon-wrapped chicken thighs became my answer — crispy, fatty, and bright with lemon. The bacon renders its fat into the pan, the butter sauce comes together in minutes, and suddenly you have something that feels indulgent without a single carb on your plate. This is comfort food that actually satisfies.
