Method
Chop dark chocolate into rough 1cm pieces and transfer to a mixing bowl. Add butter in small pieces. Set aside.
Heat heavy cream and honey in a small saucepan over medium-low heat, stirring occasionally, until it reaches a gentle simmer at the edges and reads 85°C on a probe thermometer, about 4-5 minutes. Do not boil.
Pour hot cream over chocolate-butter mixture. Let stand 60 seconds to melt, then stir from center outward in small circles until fully emulsified and glossy, about 2 minutes.
Add smoked paprika and 30g cocoa powder to the ganache. Whisk vigorously until completely smooth and uniform, about 1 minute.
Transfer ganache to a shallow container, press plastic wrap directly onto the surface to prevent skin formation, and refrigerate until firm enough to scoop, minimum 2 hours or overnight.
Mix 40g cocoa powder with 1g smoked paprika in a shallow bowl; set aside.
Remove chilled ganache. Using a melon baller or tablespoon measure, scoop portions of 18-20g each onto parchment. Work quickly before warmth from hands softens the ganache.
Roll each portion between palms into a tight sphere. Immediately drop into cocoa-paprika coating and roll to coat evenly. Transfer to a wire rack. Repeat with remaining ganache.
Refrigerate finished truffles on the rack for 15 minutes to set coating. Store in an airtight container layered with parchment, refrigerated. Bring to near room temperature before serving for optimal texture and flavor bloom.
