Method
Slice the bread into thick rustic slices, approximately 1/2 inch each.
Brush each slice generously with olive oil on both sides.
Toast the bread slices in a dry pan over medium-high heat until golden and crisp on both sides, about 2-3 minutes per side. Set aside.
Tear the basil leaves by hand into rough pieces. Do not chop them—tearing preserves the edges where the flavor lives.
Cut the garlic clove in half and rub the cut side vigorously across each warm toast slice. The roughness of the bread will catch the garlic.
Spoon the salted tomatoes over each toast, letting the juices soak in.
Scatter torn basil over the top. Serve immediately, before anyone asks for a photo.

Safety & Storage
Allergen Warning
Bread contains gluten. For gluten-free diets, substitute with certified gluten-free bread.
Cross Contamination
Use separate cutting boards for raw vegetables and bread to prevent cross-contact with allergens.
Storage
Refrigerate fresh tomatoes and basil if not used immediately. Fresh herbs like basil spoil quickly at room temperature.
Handling
Wash all produce thoroughly under running water before dicing or tearing, including tomatoes and basil leaves.
High Risk Population
This dish contains no animal proteins requiring temperature control, but immunocompromised individuals should ensure all produce is washed and prepared in clean conditions.
Garlic may cause skin irritation in sensitive individuals. Wash hands after handling raw garlic.
Pro Tips
Technique
When rubbing the garlic on the toast, press hard. The rough surface of rustic bread is doing you a favor by catching those aromatic oils — don't waste it with a gentle caress.
Substitution
Sourdough is a noble substitute for white bread here. The tang cuts through the tomato's acid like a proper coffee cuts through a Monday morning.
From the chef
This is what I call a proper open-faced sandwich — bread doing its job without apology, tomatoes that taste like something other than water, and basil that hasn't been through a shipping container. No one needs a reservation for this. No one needs a ladder to reach it. Just bread, tomato, garlic, and the radical act of eating lunch at lunch.
