Darius Ahmadi grew up in Shiraz, where his grandmother judged every cook by the gold of their tahdig and the patience in their wrist. After years cooking in Tehran's home kitchens, he moved to a small flat in Barcelona and learned to coax saffron rice and herb stews from a Mercadona shopping basket. He believes a Persian table is an act of generosity, and that rice, layered and steamed slow, is the closest thing cooking has to poetry.
