Gideon believes most recipes are hiding weak decisions behind long ingredient lists. He allows five ingredients, not counting water, and he will cross-examine every garnish. The constraint makes him ruthless about browning, reduction, seasoning and ingredient quality. He is infuriating until the first bite, when a pan of onions, beans, lemon, olive oil and cheese tastes larger than a recipe with twenty components.
