Method
Heat oven to 200C. Toss butternut squash cubes with 2 tbsp olive oil, 1 tsp smoked paprika, and 0.5 tsp salt on a lined baking sheet. Spread in a single layer.
Roast 25-30 minutes, flipping once at the 15-minute mark, until deeply caramelized at the edges and tender when pressed. Do not rush this step.
While squash roasts, heat 2 tbsp olive oil in a wide pan over medium heat until shimmering.
Add garlic to the oil. Stir and cook 90 seconds until fragrant and just starting to turn pale gold — not brown.
Add drained white beans to the pan. Season with 1 tsp smoked paprika and 0.5 tsp salt. Toss to coat and cook 5-6 minutes, pressing and stirring occasionally, until beans are heated through and some have started to break down into a rough paste.
Add roasted squash to the bean pan. Stir and press together with a wooden spoon, leaving some squash chunks intact for texture. Cook together 2-3 minutes to meld flavors.

Kitchen Equipment
Safety & Storage
Equipment Safety
Position oven rack in center when roasting at 200C. Use a sturdy baking sheet with rim to prevent oil or squash juices from spilling.
Cooking Temperature
Do not exceed medium heat when cooking garlic in oil. Garlic transitions from golden to burnt quickly, producing bitter acrolein. Remove from heat if oil begins to smoke.
Storage
Refrigerate leftover mash within 2 hours in an airtight container. Consume within 3-4 days for best quality.
Shelf Life
Reheat leftovers to 75C minimum throughout before serving. Do not reheat more than once.
Handling
Allow roasted squash to cool slightly before combining with bean mash to avoid thermal splatter when mixing. Use a wooden spoon to press beans without crushing them unevenly.
Pro Tips
Technique
Do not touch that squash for the first 15 minutes. Let it sit, let the heat work, let those edges develop actual caramelization. If you flip it too early, you're just moving sugar around instead of building flavor. Trust the process.
Substitution
If you can't find butternut squash, use roasted sweet potato — same weight, same method. The white beans are non-negotiable; that's the entire texture foundation of this dish.
From the chef
I developed this mash because someone tried to convince me it needed sage, maple syrup, and a pecan crumble on top. I sent them home. What they didn't understand is that butternut squash roasted until the edges char and sweeten is already doing three jobs at once — and white beans broken down against hot iron do the work of a dozen unnecessary additions. This is restraint yielding something that tastes like you spent all day on it.
