Margaux grew up between the rows of a small market garden outside Saint-Rémy-de-Provence, where her grandmother sold tomatoes, courgettes, and bunches of thyme at the Wednesday marché. She trained briefly in a Marseille kitchen but found fine dining too far from the soil, so she came home to cook the way the seasons demanded — slow gratins in winter, ratatouille and pistou when the garden overflowed in August. She believes the best Provençal cooking is patient rather than fancy: a long sweat of onions, a good glug of olive oil, and whatever the beds and the coast gave you that morning.
