Method
Wash and dry each apple very well. Remove any stickers. Insert a popsicle stick about halfway into each apple — push it in firmly so it stays put! Set them on a parchment-lined baking sheet.
Pop the apples in the freezer for 15 minutes while you make the caramel. Cold apples help the caramel stick better!
Ask your adult helper to combine the butter, brown sugar, white sugar, milk, and salt in a medium saucepan over medium heat.
Adult helper: Stir the mixture constantly as it melts together. Let it come to a gentle boil.
Adult helper: Once it starts boiling, let it cook for 5 minutes without stirring. The mixture should get thick and golden-brown like liquid caramel. It will be VERY HOT — do not touch it!
Adult helper: Carefully remove the saucepan from the heat. Let it cool for 2 minutes.
While the caramel cools slightly, pour the rolled oats into a large zip-lock bag. Seal it and crush the oats by rolling over them with a rolling pin or your hands. You want small crunchy pieces, not powder!
Pour the crushed oats into a shallow bowl or plate. Add the sunflower seeds and drizzle the honey on top. Mix it all together with your hands until everything is coated and clumping slightly.
Take the apples out of the freezer. One at a time, hold them by the stick and dip them into the warm caramel sauce. Turn the apple slowly so the caramel coats most of it, leaving a little gap at the top.
Let the excess caramel drip off for a few seconds, then immediately roll the caramel-coated apple in the oat-seed mixture. Press the topping gently so it sticks to the caramel.
Place the finished apple back on the parchment paper. Repeat with the remaining apples!
