Final Proofing (Apprêt)
The last rise of shaped dough before baking, building volume and open crumb.
Final proofing, or apprêt, is the last fermentation of shaped dough, where yeast produces gas that inflates the loaf before it hits the oven. Bakers judge readiness by feel and the poke test rather than the clock, since over-proofed dough collapses and under-proofed dough is dense. A warm, humid environment helps the dough expand evenly without drying.
Final proofing — the French *apprêt* — is the last rise given to dough after it has been shaped and before it goes into the oven. It is distinct from bulk fermentation (*pointage*), which builds the dough's internal structure while it still sits as a single mass; final proofing locks in the loaf's geometry, final gas content, and the crumb that will be revealed when the bread is cut. Because shaping has already aligned the gluten network and oriented the gas cells, what happens during this stage largely determines oven spring, slice shape, and whether the crumb reads tight and even or open and irregular.
The work is mostly biological and physical rather than mechanical: yeast continues to convert sugars into CO₂ and ethanol, the gluten relaxes under that pressure, and the dough expands roughly 50–100% in volume for most lean loaves. Temperature (24–27°C / 75–80°F for most breads) and humidity (70–80% RH) need to be controlled because a dry surface forms a skin that seals the loaf, restricting rise and dulling any lamination in enriched doughs. Most bakers cover shaped dough with a damp towel, plastic wrap, or a couche, and either rest it warm or slide it into the refrigerator for a slow, cold retard that builds flavor and makes scoring cleaner.
Judging readiness is the real skill. The dough cannot be read by the clock alone — ambient temperature, dough temperature after mixing, yeast or starter vigor, hydration, and enrichment all shift proof speed by 30–100%. The poke test (a floured-finger dent that slowly springs back, leaving a faint impression) is the standard read; quick rebound means under-proofed, no rebound at all means over-proofed. A proof that ends in the oven — not on the counter — is the goal, which is why cold retarding is so popular with working bakers: it slows the dough at peak activity so it can be scored and loaded straight from the fridge.

How to do it

Shape the dough
After bulk fermentation (pointage) and any pre-shaping bench rest, give the dough its final shape — boule, batard, baguette, pan loaf, or lamination form. Handle gently to preserve internal gas.

Seat it in its proofing vessel
Place the shaped dough seam-up in a floured banneton, seam-down between folds of a floured couche, or seam-down in an oiled or buttered pan, depending on the loaf style.

Cover to prevent a skin
Use a plastic shower cap, beeswax wrap, damp linen couche, or a tight-fitting lid. The surface must stay supple and slightly tacky throughout the proof.

Set temperature and humidity
Aim for 24–27°C / 75–80°F and 70–80% RH. Use a proofer, the oven with the light on, an insulated cooler, or a warm spot away from drafts.

Choose room-temperature proof or cold retard
Room-temp proof for short, schedule-free bakes. Cold-retard at 2–4°C for 8–24 h for deeper flavor, easier scoring, and stronger oven spring — common for sourdough, rye, and yeasted breads.

Test for doneness with the poke test
Press a floured finger about 1 cm into the dough: it should slowly spring back, leaving a faint, lasting impression. Quick rebound = under-proofed; no rebound = over-proofed.

Mist or dust before scoring
A light water mist or rice-flour dusting keeps the surface supple for clean cuts. Cold-retarded loaves are usually scored straight from the fridge, while firm and relaxed.

Score and bake immediately
Transfer the fully proofed dough to a hot stone, steel, dutch oven, or sheet pan and load it into the oven. The oven spring you see in the first ten minutes was largely locked in by this stage.
Reading the poke test
The poke test is the baker's most reliable field instrument, but it is a feel more than a measurement. Flour a finger so it doesn't tear the surface, press about 1 cm into the dough, and watch what happens in the next 2–3 seconds.
- Slow, partial spring-back with a faint lasting dent — fully proofed and ready for the oven.
- Fast, full spring-back — under-proofed; give it another 15–30 minutes and retest.
- No spring-back, finger leaves a deep hole — over-proofed; bake immediately or accept that oven spring will be weak.
- A tiny jiggle when the pan is gently nudged is the practical shorthand: it should feel alive but not sloshy.
When to cold-retard instead
Cold retarding is not a different proof — it is a slowed-down final proof, run at refrigerator temperature so yeast activity barely registers while flavor and enzymatic activity continue. It is the right choice when flavor, schedule, or scoring precision matters more than speed.
- Sourdough and rye: 12–16 h cold retard is the modern default for deeper, more complex flavor.
- Yeasted pan loaves: an overnight cold proof in the pan (then baked straight from the fridge) gives noticeably better taste than a same-day room-temp proof.
- Croissants: a short 30–60 min bench proof at room temperature followed by an overnight cold retard firms the butter layers and makes the final shaping cuts cleaner.
- Baguettes: a brief room-temp proof or immediate cold retard both work; the overnight cold version improves flavor and makes scoring easier on the cold, firm dough.
- Doughs high in sugar or butter: cold retard them — enriched doughs over-proof quickly and collapse at room temperature.
Common failure modes
Most proofing problems at home are not scoring problems, shaping problems, or oven problems — they are proofing problems that only become visible after the bake.
- Bottom or side blowout with dense crumb: under-proofed, not under-scored. The loaf had nowhere to expand except its weakest seal.
- Flat, dense loaf with no oven spring: over-proofed. The gluten was already exhausted before the oven could lift it.
- Croissants with greasy, fused layers: over-proofed lamination. Visible puffiness at room temperature was the warning sign.
- Pale, tight crust with a wrinkled shoulder: a skin formed during proof. Cover more thoroughly next time and avoid drafts.

- Over-proofing is the most common home-baking failure: a tiny, slow jiggle when the pan is nudged is the signal to bake, not the clock.
- Under-proofed dough will spring back fully when poked and often bursts at the bottom or side seam in the oven — an ugly 'blowout' is not always a scoring problem.
- A room that feels comfortable (around 21°C / 70°F) is usually too cool; final proof benefits from being 3–6°C warmer than your living space.
- Cover shaped dough to prevent a skin — a skin seals the surface, restricts oven spring, and makes lamination shine disappear on croissants.
- Pull dough straight from the fridge when cold-retarding; scoring and oven spring are far easier on a cold, firm loaf than a warm, slack one.
- Enriched doughs (butter, eggs, sugar) proof more slowly at first and then over-proof and collapse suddenly — check them earlier and more often than lean doughs.
- Avoid drafts: an open window, a fan, or an air-conditioning vent can drop surface humidity and crust the skin in minutes.
- For croissants and danish, proof just until visibly puffy but not doubled — over-proofed lamination loses its distinct layers and leaks butter.
