Born into a family of binchōtan producers in Kagoshima, Haruki learned to read the white coals before he learned to read. He believes the fuel is the dish—that the clean, radiant heat of proper charcoal reveals ingredients in ways gas and smoke never could. His kitchen is a temple of simplicity: skewers of nothing fancy, cooked over painstakingly prepared coals, seasoned with nothing but salt, honesty, and fire.
