Method
Remove shortcrust pastry from refrigeration. On a lightly floured surface, roll into a rough 30cm circle, about 4mm thick. Transfer to a parchment-lined baking sheet and refrigerate while preparing the filling.
Preheat oven to 200C (400F). Peel butternut squash, halve lengthwise, and scoop out seeds. Cut into 1cm half-moons.
Toss squash with olive oil, smoked paprika, salt, and black pepper in a bowl until evenly coated. Spread in a single layer on a baking sheet.
While squash roasts, thinly slice yellow onion into half-moons. Mince garlic. Heat 1 tsp olive oil in a small pan over medium heat. Add onion and cook for 8-10 minutes, stirring occasionally, until softened and translucent. Add garlic and cook 1 minute more until fragrant. Remove from heat.
Arrange the roasted butternut squash slices over the onion layer. Grate cheddar cheese and scatter evenly across the filling.
Fold the pastry border up and over the filling, pleating every 3-4cm to create a rustic edge. Crack the egg into a small bowl, beat lightly, and brush over the folded pastry crust.
Bake for 25-28 minutes until the crust is deep golden brown and the cheese has melted with some light browning spots. Transfer to a wire rack and let rest for 10 minutes before slicing into wedges and serving warm.

Kitchen Equipment
Safety & Storage
Cooking Temperature
Preheat oven to 200C (400F) for initial squash roasting and 190C (375F) for galette baking. Use an oven thermometer to verify accuracy as undercooked squash may harbor bacteria and improperly baked pastry leaves egg wash undercooked.
Cross Contamination
Keep raw egg used for egg wash separate from ready-to-eat ingredients. Clean all utensils and surfaces that contact the egg before using them for other food preparation.
Handling
Use pasteurized eggs for the egg wash if serving to high-risk populations including pregnant individuals, young children, elderly, or immunocompromised persons to eliminate salmonella risk.
Storage
Store leftover galette in airtight container in refrigerator within 2 hours of baking. Consume within 3-4 days. Reheat to internal temperature of 74C (165F) before serving.
High Risk Population
Ensure all cheese is fully melted and reaches safe temperature. Egg wash on crust surface should achieve golden-brown color indicating adequate heat exposure.
Pro Tips
Technique
When roasting the squash, watch for the moment the edges turn amber—this is your signal, like reading the white of coals. Remove it then. The squash should be tender but still holding its shape, not collapsing into softness.
Substitution
If Welsh onion is available, thinly slice and scatter over the filling before the cheddar—its clean sharpness cuts through the richness beautifully, just as I might finish a yakitori skewer with a whisper of fresh negi.
From the chef
Autumn squash roasted until its sweetness emerges like coals finding their glow—this is where the galette begins. The smoked paprika offers only a whisper of warmth that settles into the flesh without overwhelming, the caramelized onion folding beneath it quietly, the cheddar completing the layer with a kind of inevitability. A rough-edged free-form crust, pleated with care, deep golden brown from the oven. Simple elements arranged honestly, each one allowed to speak.
