Couverture is the chocolate of the pastry kitchen — built for the work that ordinary eating chocolate can't do. What separates it is fat, specifically cocoa butter: by EU regulation (Chocolate Products Directive 2000/36/EC), couverture must contain at least 31% cocoa butter, where a standard bar usually sits between 15 and 25%. That extra fat isn't a luxury; it's the functional reason couverture behaves the way it does. It melts to a thin, fluid consistency that flows evenly over a bonbon and drains cleanly from a mold. It can be tempered — seeded and agitated through a precise temperature curve — so the cocoa butter crystallizes into stable beta crystals, which give finished chocolate its snap, its satin gloss, and the slight contraction that pops a shell cleanly out of a polycarbonate mold.
The trade-off is that couverture rewards discipline. Skip the tempering and you'll see it on the plate as fat bloom — those dull grey-white streaks that look like the chocolate has gone bad (it hasn't, but it feels like it has). Let a single drop of water slip in and the whole bowl seizes into a thick, grainy paste. For everyday baking where chocolate is melted into a batter or a dough, a good eating chocolate is better value. Couverture earns its premium the moment you need a 2 mm shell, a mirror finish, or a dipped strawberry that snaps when you bite it.
For home cooks, the practical takeaway is simple: reach for couverture when snap, gloss, and a thin shell matter — molded bonbons, enrobed truffles, dipped fruit, decorative work. Reach for eating chocolate for brownies, cookies, and drinking chocolate. The single most useful number on the bag is the cocoa-butter percentage, not the cacao percentage. Anything labeled 'couverture' with 30% or less cocoa butter is misleading, and a non-couverture 70% bar is still no substitute, because it lacks the fat to flow and release.

The professional workhorse, sold at cocoa-solid percentages from 50% up to 85% and beyond; 70% is the everyday choice for ganaches and enrobing, 64% for sweeter fillings, 80%+ when you want chocolate to taste unmistakably of chocolate.
Slightly lower cocoa-butter content than dark, but still above the regulatory floor; used for milk-chocolate shells, molded bars, and softer ganaches that need a rounder, sweeter profile.

Why the high cocoa butter matters
Cocoa butter is a polymorphic fat — its crystals can lock into several different shapes, only one of which (Form V, the beta crystal) gives you the results pastry chefs want. Tempering is the process of encouraging that specific crystal to dominate, and it works because couverture has enough cocoa butter to manipulate. Once tempered, the chocolate sets with a hard, glassy snap, a satin surface, and a useful tendency to shrink as it cools, which is what makes molds release cleanly. A regular bar with 18% cocoa butter simply has too little fat for the crystals to organize properly; you can melt it, but the finished surface will be soft, streaky, and prone to fat bloom within hours.
That same cocoa butter is also why couverture is so fluid when molten. The extra fat reduces viscosity, so the chocolate can be applied in a thin, even coat and drain from molds without leaving thick feet at the base of a bonbon. In practical terms: thinner shells, lighter feel, faster set.
Reading the label
Cacao percentage and cocoa-butter percentage are not the same thing, and confusing them is the most common mistake at the store.
- Cacao % = cocoa solids (non-fat cocoa + cocoa butter). On a 70% bar, 70% of the weight is cacao-derived.
- Cocoa butter % is the subset that is fat. The remaining cacao portion is the non-fat cocoa that carries flavor.
- A '70% cacao' bar is not automatically a couverture. It must also state or imply the 31%+ cocoa-butter threshold to qualify.
- If a label says 'couverture' and lists cocoa butter below 30%, treat it with suspicion — the EU minimum is the floor, not a marketing line.
- In professional kitchens, viscosity ratings (often 3, 4, or 5 drops on a brand's flow chart) matter as much as percentages; they tell you how thin the chocolate will be at working temperature.
Tempering essentials
Tempering is the one technique that defines working with couverture. The principle is the same for every method: melt the chocolate to destroy all existing crystals, cool it to encourage stable beta crystals to form, then rewarm to working temperature so only the right crystals survive. The numbers vary by maker, but the broad ranges below are reliable starting points.
- Dark couverture: melt to 45–50°C (113–122°F), seed and cool to 27–28°C (80–82°F), rewarm to 31–32°C (88–90°F) for working.
- Milk couverture: melt to 40–45°C (104–113°F), seed and cool to 26–27°C (78–80°F), rewarm to 29–30°C (84–86°F) for working.
- White couverture: melt to 38–42°C (100–108°F), seed and cool to 25–26°C (77–79°F), rewarm to 28–29°C (82–84°F) for working.
- Tabling (pouring onto a marble slab and working with a scraper) and the Mycryo cocoa-butter shortcut are valid alternatives to seeding; the underlying crystal logic is identical.
Common uses
Tips & pitfalls
- Temper before any application where snap and shine matter. Use the seed method: melt two-thirds of your chocolate to 45–50°C for dark (40–45°C for milk and white), then add the remaining one-third as finely chopped pieces and stir until smooth and cool. Dark should land at 27–28°C, milk at 26–27°C, white at 25–26°C. Rewarm gently to working temperature before using.
- Never let water, condensation, or high-proof alcohol touch melted chocolate — it seizes into a stiff, grainy paste almost instantly. Dry fruits thoroughly before dipping, wipe every tool, and never cover a bowl of melting chocolate with a lid (condensation will fall back in).
- Re-temper chocolate that has been held molten for more than 4–6 hours. The cocoa-butter crystals degrade with time and heat, and the chocolate will streak or bloom even if it looked perfect an hour ago.
- Add Mycryo (pure cocoa butter, about 2% by weight) as a shortcut to tempering. Sprinkle it into melted chocolate at 40–45°C and stir; no seeding or tabling required. The result is genuinely tempered, not a workaround.
- Fat bloom (white or grey streaks) is almost always a tempering or storage issue, not a quality issue. Re-temper for any surface work; for ganache fillings, just melt and use — bloom inside a bonbon is invisible.
- Polish polycarbonate molds with cotton and a tiny dab of cocoa butter or 100% alcohol on a lint-free cloth. The difference between a cloudy shell and a mirror-finish shell comes down to mold preparation.
- To fix seized chocolate in a ganache, whisk in room-temperature cream or softened butter a tablespoon at a time until it loosens. For pure seized chocolate with no other ingredients, a splash of warm cocoa butter can rescue it.
- Test a small batch in your molds before committing to a full run. Different makers' couvertures flow and set slightly differently, even at the same cacao percentage.
