Method
Place the white beans in a small bowl and cover with 2 cups of cool water. Let them soak at room temperature for at least 8 hours or overnight.
Peel and finely dice the yellow onion. Set aside.
Peel the garlic cloves and give them a gentle crush with the flat of your knife. Set aside.
Scrub the carrot and slice it into thin coins. Set aside.
Separate the chard stalks from the leaves. Cut the stalks into small pieces and roughly tear the leaves. Keep them apart.
Season with salt and a small pinch of white pepper. Taste and adjust the seasoning if needed. If the broth seems thin, let it reduce for a few more minutes with the lid off.

Safety & Storage
High Risk Population
Room temperature soaking of beans for 8+ hours falls within the temperature danger zone (40°F-140°F). Vulnerable populations should use quick-soak method: cover beans with boiling water and soak for 1 hour, or use pressure cooking fresh beans.
Storage
Cooked beans must be refrigerated within 2 hours of cooking. Store in airtight container and consume within 3-4 days. For longer storage, freeze for up to 3 months in portioned containers.
Cross Contamination
Use separate cutting boards and utensils for raw beans and aromatics. If reusing equipment from allergen-containing ingredients, wash thoroughly with hot soapy water between uses.
Allergen Warning
When using store-bought chicken broth, verify ingredient labels for hidden allergens including celery, fish, wheat, soy, and sulfites as these vary by brand. Consider making broth from scratch to control allergen exposure.
Handling
Crushing garlic with knife flat requires careful hand placement. Keep fingertips curled and use controlled pressure to prevent cuts. Place cloth under cutting board for stability.
Pro Tips
Technique
If you forget to soak the beans overnight, cover them with boiling water and let them sit for one hour — they soften almost as well and your supper is not delayed.
Substitution
If chard is not available, kale or spinach work beautifully here. The cooking time stays the same, though kale may need a few minutes longer to become silky.
From the chef
When Tomás was here, I always made this in a great pot for four and watched half of it disappear into the bin after a week. Now I measure just enough for my supper — half a cup of beans, a handful of chard, one sprig of rosemary from the balcony. The slow simmer turns simple things into something silky and brothy, the kind of meal that fills you without heaviness. It is patience, really. The beans teach you that.
