Method
In a large bowl, combine the all-purpose flour, baking powder, white sugar, and fine salt. Whisk everything together until it looks super-fluffy and the leavening is evenly distributed!
In a separate bowl or measuring cup, whisk together the whole milk, egg, and melted butter until the egg is fully broken up and the mixture is smooth.
Pour the wet ingredients into the dry ingredients and stir gently with a spatula just until a soft batter forms — some tiny lumps are totally okay! Do NOT overmix or your pancake bites will be tough.
Peel the banana and cut it into tiny bite-sized pieces (about 1/4 inch cubes).
Wash the strawberries, remove the green tops, and cut them into small pieces about the same size as the banana chunks.
Gently fold the diced banana and strawberry pieces into the pancake batter using a spatula. Give it just 5-6 folds so you still see colorful fruit pockets peeking through!
Generously butter every single cup of a 24-cup mini muffin tin (2 tins if you have them). This step is super important so your pancake bites don't stick!
Spoon the fruity batter into each mini muffin cup, filling them about 3/4 full. The batter should make exactly 20-24 tiny pancake bites.
If desired, push a few extra banana or strawberry pieces gently into the top of each filled cup for extra color pops!
Ask your grown-up helper to place the muffin tin(s) in the oven preheated to 190°C (375°F). Bake for 12-15 minutes until the pancake bites are puffed up and their tops look golden.
The pancake bites are done when a toothpick inserted into the center of one comes out clean with no wet batter clinging to it.
Let the muffin tin cool on a wire rack for 2 minutes. Then carefully pop each pancake bite out using a butter knife — they should release easily if you buttered the tin well!
Place each coated pancake bite onto a clean plate or cooling rack. Let them cool for 5 minutes — or eat 2 right away, we won't tell!
In a small saucepan, whisk together the cocoa powder, white sugar, whole milk, and a pinch of fine salt until smooth with no lumps.
Ask your grown-up helper to heat the saucepan over LOW heat, stirring constantly, until the sauce thickens and becomes glossy — about 3-4 minutes. Do not let it boil!
Remove from heat and let cool for 2-3 minutes. The sauce will thicken slightly as it cools. Serve warm in a small bowl for dipping.
