Cauliflower roasted in butter gets smothered in a cheddar and heavy cream sauce that thickens as it bakes, with bacon tucked throughout for smokiness and crunch. What comes out of the oven looks and tastes like it should be illegal — it isn't, and the macros are fine.

Method
Preheat oven to 400°F (200°C). Bring a large pot of salted water to a boil.
Cut the cauliflower into even florets and boil for 6–8 minutes until just tender. Drain well and spread in a 9x13 baking dish.
Pour in the heavy cream and bring to a gentle simmer. Stir in the cheddar cheese a handful at a time, letting each addition melt before adding more.
Season with salt and black pepper. Stir until smooth and glossy.
Pour the cheese sauce evenly over the cauliflower florets in the baking dish. Toss gently to coat.
Sprinkle the remaining cheddar cheese over the top.
Bake for 20 minutes until the sauce is bubbling and the cheese is golden and melted on top.
While the bake is in the oven, cook the chopped bacon in a skillet over medium-high heat until crispy, about 5–6 minutes. Drain on paper towels.
Garnish with fresh chives and serve immediately while hot and bubbling.

Safety & Storage
Cooking Temperature
Bake at 400°F (200°C) for 20 minutes until sauce is bubbling and cheese is golden. Bacon must be cooked to crispy (5-6 minutes over medium-high heat) to ensure proper doneness.
Cross Contamination
Use separate cutting boards and utensils for raw bacon and vegetables. Wash hands thoroughly after handling raw bacon before touching other ingredients.
Storage
Refrigerate leftovers within 2 hours in airtight containers. Cheese sauce and dairy components spoil quickly at room temperature.
Shelf Life
Consume within 3-4 days when refrigerated. Do not leave at room temperature for more than 2 hours total.
High Risk Population
Pregnant individuals, elderly, and immunocompromised should ensure bacon is cooked to well-done and cheese sauce is heated thoroughly before consumption.
Allergen Warning
This dish contains milk products (cream and cheddar cheese). Ensure no cross-contact with allergen-free foods if serving to allergic individuals.
Pro Tips
Technique
After boiling the cauliflower, spread it on a clean kitchen towel and press firmly — removing excess moisture is the difference between a soggy mess and a bake with beautiful caramelized edges.
Substitution
Swap the cheddar for a mix of sharp cheddar and Gruyère if you want a more complex, nutty sauce that still melts perfectly.
From the chef
Cauliflower roasted in butter until it just starts to color, then smothered in a cheddar and heavy cream sauce that thickens as it bakes — this is what keto comfort food actually looks like. Bacon goes in throughout, not on top as an afterthought, so every bite has smokiness and crunch. The cheese sauce builds from garlic and cream, and by the time it comes out of the oven it is thick, golden, and genuinely indulgent. The macros are fine. That part almost doesn't matter when the dish is this good.
