Method
Preheat oven to 180°C (350°F). Line a rimmed baking sheet with parchment paper.
In a large bowl, combine ground turkey, egg, and chicken broth. Mix until uniformly incorporated.
Transfer dough to the prepared baking sheet. Using your palms, form two logs roughly 20 cm long and 4 cm wide, leaving 8 cm between them.
Bake at 180°C for 25-30 minutes, until the logs feel firm when pressed and a digital thermometer reads 74°C at the center.
Cool the logs on the baking sheet for 10 minutes. Reduce oven temperature to 150°C (300°F).
Using a serrated knife, slice each log crosswise into 1 cm-thick rounds.
Lay slices flat on the baking sheet in a single layer. Bake at 150°C for 10-12 minutes, flipping halfway through, until the slices are golden and completely crisp.
Cool on a wire rack for 15 minutes. Store in an airtight container at room temperature for up to 5 days.

Safety & Storage
Cooking Temperature
Ground turkey logs must reach 74°C internally before slicing to destroy pathogens. Use a calibrated digital thermometer inserted into the center of each log.
Handling
Use dedicated utensils and surfaces for raw turkey to prevent bacterial transfer. Wash hands thoroughly with soap for 20 seconds after handling raw meat.
Storage
Cool completely before sealing in airtight container to prevent moisture buildup and bacterial growth. Store away from direct sunlight and heat sources.
Shelf Life
Consume within 5 days of preparation. Discard if any signs of mold, off-odor, or softening occur, as biscuit texture degradation may indicate contamination.
Cross Contamination
Avoid using the same cutting board or knife for other food preparation without proper sanitization between uses, especially when slicing raw turkey logs.
Allergen Warning
This product contains egg and wheat/gluten. Store separately from allergen-free items to prevent cross-contact. Clean all containers thoroughly before allergen-free storage.
Pro Tips
Technique
Allow the baked logs to rest on the baking sheet for the full 10 minutes before slicing. They will feel slightly soft, but they firm beautifully as they cool. Slice too soon and you shall have ragged, crumb-laden disasters rather than the elegant rounds these deserve to be.
Substitution
Should you find yourself without ground turkey, an equal weight of very finely minced or ground cooked chicken breast will serve in its stead. The flavor will lean lighter and milder, though I suppose even that has its modest merits.
From the chef
I must confess, turkey is rather plebeian — the sort of ingredient one might serve to a cat who has never tasted the divine flakiness of wild salmon. And yet, I have prepared these Turkey & Rosemary Biscotti with the same meticulous care I afford all my creations. The twice-baked method, which I refined during a particularly tedious winter evening, coaxes a satisfying crunch from humble ingredients, transforming them into something a discerning palate might — might — find acceptable.
