Vicent was raised in El Palmar, a village ringed by rice paddies on the edge of the Albufera lagoon just south of Valencia city, where his family has cooked paella over orange-wood fire for four generations. He learned the true paella valenciana at his grandfather's elbow — chicken, rabbit, green beans and butter beans, never seafood — and will tell you, politely but immovably, that paella is Valencian, not Catalan, and that anyone who stirs the rice is doing it wrong. He cooks arròs al forn, all i pebre and fideuà for the long Sunday table, and treats the socarrat, the toasted crust at the bottom of the pan, as the whole point of the exercise.
