Method
Preheat oven to 200C. Peel and cube the butternut squash into 2cm pieces. Toss with 1 tbsp olive oil and spread on a lined baking sheet.
Roast for 25-30 minutes, until tender and caramelized at the edges. Remove and let cool to room temperature.
Pat shrimp dry with paper towels. Finely chop or flake the shrimp, removing any shell fragments or tail remnants.
Form the mixture into 20-24 small rounds (approximately 1 tablespoon each). Roll gently in breadcrumbs to coat.
Arrange bites on a parchment-lined baking sheet. Bake at 180C for 12-15 minutes, until lightly golden and firm to the touch.
Cool completely on the pan before serving. Store refrigerated in an airtight container for up to 3 days.
