Method
Zest both lemons into a small bowl, then juice one of them to get about 3 tablespoons of fresh lemon juice.
Mince the 4 garlic cloves very finely.
In a large bowl, combine the lemon zest, lemon juice, minced garlic, dried oregano, 1/4 cup olive oil, 1 teaspoon salt, and black pepper. Stir well to make a fragrant marinade.
Pat the whole chicken dry with paper towels, then rub the marinade all over the chicken — under the skin, inside the cavity, everywhere. Let it sit for at least 30 minutes at room temperature, or refrigerate overnight for deeper flavor.
Preheat your oven to 200°C (400°F). Position the rack in the lower third.
Cut the potatoes into quarters and the yellow onion into eighths. Toss them in a baking dish with 2 tablespoons olive oil and 1/2 teaspoon salt.
Place the marinated chicken on top of the vegetables in the baking dish. Cut the remaining lemon in half and tuck it inside the chicken cavity along with a few garlic cloves.
Roast the chicken for about 1 hour and 15 minutes, or until the juices run clear and a thermometer inserted into the thickest part of the thigh reads 74°C (165°F). Baste the chicken with the pan juices halfway through cooking.
If the skin is not golden and crispy by the last 15 minutes, turn the oven up to 220°C (425°F) for the final stretch.
Remove the chicken from the oven and let it rest for 10 minutes before carving. This allows the juices to redistribute.
Squeeze the roasted lemon from the cavity over the carved chicken. Drizzle with a little extra virgin olive oil and a pinch of dried oregano if you like.
Serve alongside the roasted potatoes and onions, spooning the pan juices over everything. A simple Greek salad on the side and you have a complete taverna meal.

Safety & Storage
Cooking Temperature
Internal thigh temperature must reach 74°C (165°F) before consumption. Use a calibrated meat thermometer for accuracy.
Allow chicken to rest 10 minutes after roasting before carving to allow juices to redistribute.
Handling
Pat chicken completely dry before marinating to ensure proper browning and reduce surface bacteria.
Avoid marinating chicken at room temperature for extended periods. The 30-minute room temperature marination step should be minimized; overnight refrigeration is safer.
Cross Contamination
Use separate cutting boards for raw poultry and vegetables to prevent bacterial cross-transfer.
High Risk Population
Poultry is a high-risk food item for vulnerable populations including young children, elderly, pregnant individuals, and immunocompromised persons.
Storage
Refrigerate leftover chicken within 2 hours of cooking. Store in airtight containers at 4°C (39°F) or below for up to 3-4 days.
Shelf Life
Reheat leftover chicken to 74°C (165°F) throughout before consuming. Only reheat leftovers once.
Pro Tips
Technique
Pat your chicken completely dry before you marinate — moisture is the enemy of crispy skin, my friend. And please, for the love of Zeus, do not baste with anything other than the pan juices. That is where all the flavor lives.
Substitution
Fresh oregano works if you have it, but use three times the amount. Dried oregano is concentrated sunshine, and it clings to the chicken skin like little brown prayers.
Equipment
Use a baking dish with high sides — you want those vegetables to swim in the olive oil and become soft and golden, not burn on the bottom. A tight-fitting lid or foil for the first 45 minutes keeps everything juicy.
Time Saver
Marinate overnight in the refrigerator if you can. I know, I know, you want it now — but the extra time lets the lemon and garlic penetrate deep into the meat, and your patience will be rewarded at the table.
From the chef
Lemon, oregano, and olive oil have been friends for a very long time, and this chicken lets them do what they do best. You rub the marinade everywhere — under the skin, into the cavity, all over — and the whole bird drinks it in. Potatoes go underneath to catch the dripping pan juices, and after an hour and fifteen minutes in a hot oven, the skin is golden and crackling, the potatoes are soft and savory, and the kitchen smells like something worth sitting down for. Drizzle with good olive oil before you serve it. That last step is not optional.
