Method
In a large bowl, whisk together the all-purpose flour, cocoa powder, 100g white sugar, and a pinch of salt. Add the 120g cold butter, cut into cubes, and work with your fingertips or a pastry cutter until the mixture resembles coarse, sandy crumbs — no large butter pieces remain.
