Kefir

Tangy, drinkable fermented milk for smoothies and breakfast

Tart and lightly effervescent, kefir is a drinkable cultured milk, sipped for breakfast or blended into smoothies for a probiotic boost. Keep it cold and well-sealed.

Kefir is fermented milk made with kefir 'grains' — squishy clusters of bacteria and yeast that ferment a wider, livelier mix of microbes than yogurt does. The result is a thin, pourable, drinkably tart cultured milk with a faint effervescent prickle from the yeast. Originating in the Caucasus, it's prized for its lively mix of live cultures and as an easy-drinking breakfast or smoothie base. In cooking it behaves like a tangy, slightly fizzy buttermilk: it makes tender pancakes and quick breads, brightens marinades, and blends into dressings, though its mild fizz and lower viscosity set it apart from yogurt.

Types & varieties

Plain whole-milk kefir

The classic — creamy, tangy, and the most versatile.

Low-fat kefir

Lighter and tarter for drinking.

Flavored kefir

Sweetened fruit versions for eating, not cooking.

Water kefir / non-dairy

Cultured on coconut or other bases for dairy-free diets.

How to choose

Choose plain, unsweetened kefir labeled with live cultures for both drinking and cooking. Expect it thinner than yogurt and slightly effervescent — a little fizz and separation are signs it's alive, not spoiled; just shake before pouring.

How to store / food safety

Keep refrigerated; kefir keeps fermenting slowly and grows tarter and fizzier with age, which is normal. A puffed lid is from natural carbonation — open carefully. Discard for mold or genuinely off smells. Its live cultures make it gentler on lactose-sensitive stomachs than plain milk.

How to cook

Use kefir like buttermilk: its acid reacts with baking soda to lift pancakes, biscuits and quick breads, and it tenderizes meat in marinades. As with all cultured milk, add it off the heat in hot dishes to avoid curdling.

Tips & pitfalls

  • Swap kefir 1:1 for buttermilk in pancakes, biscuits, and quick breads.
  • Shake before pouring — natural separation and fizz are normal.
  • Blend with fruit for a probiotic smoothie.
  • Add to marinades for a tangy tenderizer like yogurt or buttermilk.
  • Stir into cold soups and dressings; add to hot dishes off the heat.
