Method
Rinse grapes under cool running water and remove any stems or damaged berries. Set aside.
Peel cucumber, cut in half lengthwise, and scrape out seeds with a spoon. Chop into 1-inch pieces. Set aside.
Cut mango away from the pit and cube the flesh. Measure 1 cup. Set aside.
Wash basil leaves gently and pat completely dry with a clean kitchen towel. Set aside.
Combine grapes and 1 cup water in a stainless steel immersion blender pitcher. Blend on medium-high for 60 seconds until grapes are fully broken down and the liquid is smooth purple.
Add cucumber pieces, mango cubes, basil leaves, lime juice, lime zest, pineapple juice, and agave syrup to the grape blend. Blend on high for 90 seconds until all fruit is smoothly incorporated and the basil is finely distributed.
Allow the blended mixture to rest at room temperature for 5 minutes to let the basil infuse its aroma into the agua.
Line a large glass pitcher with cotton muslin strainer. Pour the rested blend through the muslin in batches, pressing gently with a wooden spoon to extract all liquid. Discard solids or reserve for composting.
Stir the strained agua fresca well. Taste and adjust sweetness with additional agave syrup if desired, or thin with extra water if needed.
Cover the pitcher and refrigerate for at least 30 minutes until thoroughly chilled. Serve in tall glasses over ice with a fresh basil leaf floating on top. Best enjoyed the same day for maximum freshness and vibrant color.

Storage
Refrigerate immediately after straining. Store in a covered glass pitcher and consume within 24 hours for optimal freshness and safety.
Shelf Life
Best enjoyed the same day of preparation as this fresh fruit beverage contains no preservatives and will degrade in quality rapidly.
Handling
Wash all produce thoroughly under running water before use. Scrape cucumber seeds completely and discard any damaged or overripe fruit pieces to minimize bacterial risk.
Cross Contamination
Clean the immersion blender, muslin strainer, and all preparation surfaces with hot soapy water before use, especially if these items have been used with allergen-containing ingredients.
High Risk Population
This beverage is made with raw fruits and unpasteurized fresh juices. Immunocompromised individuals, pregnant women, young children, and elderly persons should consume with caution.
Agave syrup may contain sulfites as a preservative. Individuals with sulfite sensitivity should check product labels before adding sweetener.
Pro Tips
Technique
When straining through the muslin, let gravity do the work gently—pressing too hard releases bitterness from the grape skins and makes the agua cloudy. Patience yields that crystal clarity I always seek.
Substitution
If your grapes are exceptionally sweet this week, reduce the agave to one tablespoon and let the fruit's natural sugars shine through instead.
From the chef
My vendor Ramón first showed me these sun-warmed grapes at dawn, their skins still cool from the morning air. I knew immediately they wanted to dance with cucumber and bright lime—an unexpected marriage that reminds me agua fresca is never truly fixed, only felt. This one tastes like a mercado morning when everything aligns just so.
