Method
In a Dutch oven or heavy-bottomed cassola, warm the olive oil over medium heat. Add the sliced garlic and cook gently until golden and fragrant, about 2 minutes. Do not let it brown.
Add the diced yellow onion and cook, stirring occasionally, until softened and translucent, about 8 minutes. Season lightly with salt.
Add the grated or finely diced tomato and cook down until the sofregit is concentrated and jammy, about 10 minutes more. The oil should begin to separate slightly.
Crumble the saffron threads into a small bowl and pour in 2 tablespoons of warm chicken broth. Let steep for 5 minutes to release the color and aroma.
Squeeze in the juice of half the lemon. Stir gently to incorporate the bright acidity into the broth.
In a mortar and pestle, pound the almonds and remaining garlic cloves with a pinch of salt until you have a rough, fragrant paste. Do not over-process — some texture is welcome.

Safety & Storage
Cooking Temperature
Shrimp must reach an internal temperature of 145°F (63°C) to ensure safety. Overcooking will cause rubbery texture. Use a calibrated food thermometer.
Cross Contamination
Almonds and shrimp present significant cross-contamination risks. Prepare and store separately throughout prep. Use dedicated cutting boards, utensils, and containers for shellfish.
High Risk Population
Shellfish poses heightened risk for pregnant individuals, elderly, young children, and immunocompromised persons. Ensure thorough cooking and avoid raw or undercooked shrimp.
Handling
Keep shrimp cold (below 40°F) until cooking. Do not let at room temperature for more than 2 hours total. Discard any shrimp with shells that are damaged, missing legs, or have abnormal odor.
Storage
Leftover shrimp braise must be refrigerated within 2 hours of cooking. Store in airtight containers at 40°F or below for up to 3 days. Reheat to 165°F before consuming.
Allergen Warning
Clearly label and communicate almond allergen to guests with tree nut allergies. Even trace contamination from almond picada could trigger severe allergic reaction.
Equipment Safety
Clean mortar and pestle thoroughly with soap and hot water after grinding almonds to prevent allergen transfer to other preparations.
Pro Tips
Technique
Never let your sofregit rush — let the tomato cook until the oil separates and the base becomes jammy. That concentration is the difference between a broth that tastes flat and one that tastes like the sea itself.
Substitution
If saffron threads are beyond your budget, a generous pinch of smoked paprika stirred into the broth at the end will give you that warm, coastal color and a hint of smokiness, though nothing replaces true saffron's floral notes.
From the chef
At the Barceloneta market, the best suquet always came from whatever didn't sell that morning — the shrimp that sat too long, the potatoes a bit too large. This dish is my memory of those end-of-day treasures: a saffron broth the color of a setting Mediterranean sun, potatoes that have drunk in every drop of that briny gold, and a rough picada stirred through at the last moment, because the sea and the land should always meet in the same bowl.
