Method
Preheat your oven to 180°C (350°F). Line a 9x9 inch baking pan with parchment paper.
Measure the flour, cocoa powder, and salt into a large bowl. Whisk them together until there are no lumps of cocoa. This is YOUR chocolate volcano base!
Add the white sugar and brown sugar to the dry ingredients. Whisk everything together so the colors are all mixed up.
ADULT TRANSFER: Carefully pour the melted butter into your dry ingredient bowl. The mixture will be dark and amazing!
Pour the brownie batter into your prepared pan. Smooth the top with your spatula so it's even.
Let the brownies cool completely in the pan on a wire rack. They need to be totally cool before adding the marshmallow topping!
ADULT ONLY: In a clean saucepan, combine the brown sugar, butter, heavy cream, and salt. Cook over medium heat, stirring constantly, until the butter melts and everything is smooth.
ADULT ONLY: Bring the caramel to a gentle boil and cook for 5 minutes, stirring the whole time, until it thickens slightly and turns a beautiful amber color. Remove from heat and let it cool.
Ask your adult to check that the brownie is completely cool. Now it's time for the marshmallow cloud!
In a super clean bowl (no grease!), add the egg whites. Beat them with a clean whisk or electric mixer until they form soft peaks — like little mountains!
Add the white sugar one tablespoon at a time, beating after each addition, until the meringue is stiff and glossy. This takes about 5 minutes with a mixer. You want all the sugar dissolved!
Spread the marshmallow meringue on top of the cooled brownies. Make it tall and fluffy! You can swirl it with your spatula to look like a cloud.
ADULT ONLY: Use a kitchen torch to toast the marshmallow meringue until it turns golden brown with beautiful brown spots. Work in circles so it toasts evenly. Alternatively, briefly broil in the oven for 1-2 minutes — watch it the whole time!
Drizzle the cooled caramel sauce all over the toasted marshmallow in rivers and swirls. Let it drip down the sides for maximum drama!
Cut into squares and watch everyone's faces when they see the layers! Best served the same day.

High Risk Population
Marshmallow topping contains raw egg whites. This dessert is NOT safe for pregnant women, infants, elderly, or immunocompromised individuals due to risk of Salmonella from uncooked egg whites.
Cooking Temperature
Adult supervision required for all heat steps: oven at 180°C (350°F), melted butter on stovetop, and caramel reaching boiling point - severe burn risk from hot sugar mixtures.
Handling
Marshmallow meringue must be made in a completely clean, grease-free bowl. Any grease will prevent egg whites from whipping properly and could cause failure.
Cross Contamination
Raw eggs and flour both present contamination risks. Ensure separate utensils and surfaces are used if preparing for allergen-sensitive individuals. Wash hands thoroughly between steps.
Allergen Warning
This recipe contains milk, eggs, and wheat/gluten. Verify all ingredients are from certified allergen-free sources if preparing for individuals with severe allergies.
Storage
Contains perishable dairy and egg products. Must be refrigerated within 2 hours. Best served same day. Shelf life is 1-2 days refrigerated due to marshmallow topping structure breakdown.
Equipment Safety
Kitchen torch used for toasting marshmallow creates open flame hazard. Keep torch away from flammable materials and never leave unattended. Alternative: brief broiler use with constant watching required.
Pro Tips
Technique
When you're beating your egg whites for the marshmallow meringue, make sure your bowl is SPOTLESS — like, wipe it with a lemon juice towel spotless. Any grease and your whites will never stiffen up, and you'll end up with sad flat meringue instead of an epic cloud!
Substitution
Want a dairy-free caramel? Swap the heavy cream for full-fat coconut cream and the butter for coconut oil — it gets super gooey and nobody can even tell the difference!
From the chef
Okay okay OKAY, I almost burned my notebook when I dreamed up THIS masterpiece. Three layers, people — fudgy chocolate brownie base, a marshmallow meringue cloud that basically floats on top like it's showing off, and caramel rivers that drip down the sides like chocolate waterfall goals. When my mom cut the first piece and everyone saw the layers? There was actual yelling. Mission accomplished.
