Method
Combine all-purpose flour, salt, and 80ml water in a bowl. Mix until a firm dough forms, adding a splash more water if needed. Wrap in cling film and rest 20 minutes at room temperature.
Divide rested dough into small portions. Using a pasta machine or rolling pin, roll each portion as thin as possible on a floured surface — aim for translucent sheets.
Cut each phyllo sheet into thin ribbons approximately 2-3mm wide with scissors or a sharp knife. Transfer shreds to a large bowl.
Press buttered kataifi shreds firmly into the prepared ramekins, creating thick cup walls and a base. Build up the edges to form a defined rim about 2cm high.
Toast 80g pistachio in a dry pan over medium heat 2-3 minutes until fragrant. Roughly chop half and finely grind the other half.
Combine whole milk and 50g white sugar in a saucepan over medium heat. Stir until sugar dissolves and milk begins to steam — do not boil. Remove from heat.
Stir in the finely ground pistachio. Let steep 5 minutes. Pour through a fine-mesh sieve, pressing to extract liquid. Reserve the pistachio-enriched milk.
Combine 200g white sugar and 100ml water in a saucepan over medium heat. Stir until fully dissolved and bring to a gentle simmer.
Using a vegetable peeler, remove the zest from 1 orange in long strips, avoiding bitter white pith. Add zest strips to the simmering syrup along with 60ml fresh orange juice.
Simmer syrup 8-10 minutes until slightly thickened and reduced to approximately 180ml. It should coat the back of a spoon. Remove from heat and discard zest strips.
Spoon the warm orange syrup generously over each cup — the shredded pastry will drink it in. Allow to sit 3-4 minutes for syrup to penetrate.

Allergen Warning
Pistachios (tree nuts) present in filling and as garnish. Use dedicated equipment and workspace to prevent cross-contact.
Contains dairy from butter and whole milk. Warn guests about lactose content and cross-contamination risks.
Contains gluten from wheat flour. Not suitable for individuals with celiac disease or wheat allergies.
Handling
Hot syrup and melted butter can cause severe burns. Use heat-resistant gloves and long utensils when pouring hot liquids.
Cooking Temperature
Milk must be heated gently and never boiled to prevent scalding and separation. Remove from heat when steaming.
Bake kataifi cups at 180°C until deeply golden, approximately 20-22 minutes. Insufficient baking may leave raw dough in cup bases.
Storage
Serve immediately after assembly. Kataifi cups lose crispness within 30 minutes of absorbing syrup and milk filling.
Cross Contamination
Pistachios are a high-risk allergen. Clean all preparation surfaces, utensils, and cutting boards thoroughly before and after handling.
Shared equipment used for phyllo dough and pistachios poses allergen risk. Designate specific tools when preparing for allergen-sensitive individuals.
High Risk Population
This dish contains multiple top allergens (tree nuts, milk, gluten). Exercise extreme caution when serving to children, elderly, or immunocompromised individuals with known allergies.
Equipment Safety
Use oven mitts when handling ramekins after baking as they retain high heat. Allow 5 minutes cooling before inverting.
Pro Tips
Technique
The kataifi must be buttered until every strand glistens like silk—if you see even a single dry patch, the cup will not bake evenly and will lose that shatter we demand. Toss with your hands, not a spoon, and feel the difference.
Substitution
When Antep pistachios are unavailable, Sicilian pistachios offer a respectable alternative, though the flavor profile shifts toward sweetness rather than the earthy intensity I insist upon. Always toast them first—never use raw.
From the chef
Each kunefe cup is built for a specific sequence of textures: the kataifi casing must shatter at first bite, then yield entirely as the orange-infused syrup rushes in. Pressing the buttered strands firmly into ramekins before baking is not optional — loose packing produces a cup that collapses rather than holds. The filling is pistachio-steeped whole milk, restrained with sugar, poured warm into the crisped shell so the layers saturate without dissolving. A scatter of roughly chopped Antep pistachio over each cup adds the final crunch and that unmistakable verdant color. Four portions, each one executed with the same care you would give to a full tray.
