Sardines grilled until the skin blisters and chars at the edges, the way they do at the Festas de Lisboa when nobody is watching the coals too carefully. Beneath them, bell pepper roasted until the skin pulls away and the flesh sweetens, dressed with garlic, red wine vinegar, olive oil, and parsley. The fish and the salad belong together — neither would be enough alone.

Method
Preheat your oven to 425°F. Place the whole bell peppers and halved yellow onion on a baking sheet. Drizzle with 2 tablespoons of olive oil, season with half the salt, and toss to coat.
When cool enough to handle, peel the skins from the peppers and remove the seeds. Tear the flesh into strips and place in a mixing bowl. Slice the roasted onion thinly and add to the bowl.
Dress the salad with the remaining 1 tablespoon of olive oil, the rest of the salt, and the black pepper. Toss gently and set aside to let the flavors marry while you grill the sardines.
Rinse the sardines and pat them very dry with paper towels. This is important — dry skin means good searing.
Mince the remaining 2 cloves of garlic and mix with 2 tablespoons of olive oil, the remaining salt, and black pepper. Rub this mixture all over the sardines, getting it into the cavities and under the skin.

Cooking Temperature
Sardines must be cooked thoroughly until the flesh easily pulls from the bone (3-4 minutes per side on high heat). Never serve sardines that appear undercooked or translucent.
Cross Contamination
Raw sardines must be handled separately from the roasted pepper salad. Use separate utensils and cutting boards, and wash hands thoroughly between handling raw fish and the ready-to-serve vegetables.
Storage
Fresh sardines should be refrigerated immediately upon purchase and used within 1-2 days. Grill and serve immediately; Leftovers must be cooled rapidly, refrigerated, and consumed within 2 days.
Handling
Check all sardines for bone fragments before serving, especially when preparing for children or elderly diners. Small pin bones are common in sardines and pose a choking hazard.
High Risk Population
This dish contains fish and is prepared with raw-to-cooked handling. Pregnant women, young children, elderly, and immunocompromised individuals should only consume sardines that have been cooked to proper temperature throughout.
Pro Tips
Technique
Always pat your sardines completely dry before grilling. Moisture is the enemy of that beautiful charred skin you want. The drier they go on, the better they come off.
Substitution
If fresh sardines are hard to find, anchovies or small mackerel work beautifully here. The method stays the same — just adjust your grill time by a minute per side.
From the chef
In Aveiro, we say the sardine chooses the moment it wants to be eaten. When the fire is hot enough and the peppers blister just right, you simply listen and obey. This is not a dish of complexity — it is a dialogue between sea and land, finished with the three things my avó always kept within reach: olive oil, lemon, and time.
