How to choose

Pick breasts that look plump and pink with no gray patches, feel firm, and smell clean and neutral — any sour or sulfurous smell means pass. Even thickness matters most for even cooking; if a breast tapers, pound or butterfly it. Air-chilled chicken tends to brown and crisp better than water-chilled.

How to store / food safety

Keep raw chicken cold (at or below 4°C), on the bottom fridge shelf so it can't drip onto other food, and cook or freeze within a couple of days. Raw chicken commonly carries Salmonella and Campylobacter: don't wash it (it just splashes bacteria around), use a separate board, and wash hands, knives, and surfaces after contact. Cook to 74°C (165°F) and never partially cook to finish later.

How to cook

The fixes for dryness are brining (even 20–30 minutes in salt water), pounding to an even thickness, and cooking hot and fast then resting. Sear in a hot pan, finish gently, and pull it at 74°C — carryover finishes it. Poaching in barely-simmering liquid keeps it tender for salads; grilling and roasting bone-in breasts hold more moisture. Always slice across the grain.
