Parmesan is a hard, aged cow's-milk grating cheese cooked and pressed into great wheels, then matured for one to three years until it's dense, dry, and shot through with crunchy crystals of aged protein. That long aging concentrates a deep, nutty, savory-umami flavor and saltiness that lets a small amount season a whole dish. The protected Italian original, Parmigiano-Reggiano, is made to strict rules from a single region with no additives; 'parmesan' more loosely covers the style. How to choose

Buy a wedge cut from the wheel, ideally with rind, and grate it as you go — pre-grated tubs lose aroma fast and contain anti-caking agents. Genuine Parmigiano-Reggiano shows its name stenciled on the rind and a pale-gold, granular interior with tiny white crystals (a quality sign, not salt). Avoid wedges that look greasy or cracked-dry.

How to store / food safety

Wrap in parchment or wax paper then loosely in foil and refrigerate; a hard wedge keeps for months. A little surface mold can be cut away from a hard cheese with margin. Save and freeze the rinds for stock. Traditional Parmigiano-Reggiano is made from raw milk but its long aging makes it safe.

How to cook

Parmesan melts into risotto and pasta sauces but can clump or string if overheated — stir it in off the heat at the end, often with a splash of starchy pasta water to emulsify it into a glossy sauce. Its rind, simmered in soups, beans, and broths, gives deep savor; fish it out before serving. Grate it fine for even melting, shave it in ribbons for boards and salads.
