Manchego is Spain's iconic cheese, made from the milk of Manchega sheep in the La Mancha region and pressed in molds that leave its rind a distinctive zigzag, basket-weave pattern. Sheep's milk makes it rich and buttery with a nutty, slightly piquant, faintly gamey depth that grows sharper and more crystalline with age. It's a firm cheese — sliceable young, harder and more crumbly when aged — and a tapas-board cornerstone, classically eaten with quince paste (membrillo), olives, and a glass of Spanish wine. Real Manchego is PDO-protected, made only from Manchega sheep's milk.

How to choose
Look for the patterned rind and a PDO mark for the genuine article. Pick the age for the job: semicurado for slicing and snacking, curado for boards, viejo for grating and big flavor. Good Manchego smells nutty and lanolin-rich; avoid wedges that look cracked-dry or sweaty.
How to store / food safety
Wrap in wax paper then loosely in foil and refrigerate; firmer aged pieces keep for months. The patterned outer rind (and any wax or cloth coating) isn’t eaten — cut down to the paste, discarding the rind itself rather than a wide margin. Cut away surface mold from a hard wedge with margin. Choose pasteurized-milk Manchego when pregnant.
How to cook
Manchego is mostly an eating cheese — sliced for tapas, shaved over salads, or melted gently into croquettes and bakes (aged Manchego can go oily if overheated, so warm it slowly). Pair its richness with quince paste, honey, Marcona almonds, and cured meats for a classic Spanish board.
