How to choose
Buy live mussels with tightly closed shells (or ones that snap shut when tapped) and a fresh sea smell; discard any that are cracked, gaping and won't close, or smell off. Rope-grown farmed mussels are cleanest. They should feel heavy with seawater, not light and empty.
How to store / food safety
Keep live mussels cold and breathing — in a bowl loosely covered with a damp cloth in the fridge, never sealed airtight or sitting in fresh water, which suffocates and kills them. Cook the day you buy them. The key safety rule: discard any mussel that doesn't close before cooking, and any that stays shut after cooking. Cook through; mussels are a shellfish allergen.
How to cook
Scrub the shells and pull off the wiry 'beard' just before cooking. Steam them in a hot covered pot with a splash of wine, stock, or beer plus aromatics for three to five minutes, shaking the pot, until the shells open — that's done. Throw out any stubborn closed ones. Don't overcook or they shrink and toughen. Serve in the broth with bread.
