Method
Grease a 23-cm (9-inch) round cake pan with a little olive oil and line the bottom with parchment paper.
Add the almond flour, all-purpose flour, baking powder, and salt to the bowl. Stir with a spatula until a thick, smooth batter forms — it will be richer than a standard butter cake.
Pour the batter into the prepared pan and smooth the top. Arrange the roasted pear halves cut-side down on top of the batter, pressing gently so they nestle in.
Bake at 175°C (350°F) for 38-45 minutes, until the cake is deep golden at the edges, springs back when lightly pressed, and a skewer inserted near the center comes out clean.
Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely — about 30 minutes more.
Slice the cake and plate. Drizzle each portion with an extra tablespoon of honey and scatter a few chopped almonds over the top. Serve warm or at room temperature.

In the Empordà, autumn means our neighbor Mercè sends up crates of Williams pears from her orchard down the valley, and suddenly you must find a thousand ways to use them before they soften. This cake is my answer — a moist, fragrant thing built on good Empordà olive oil and almond flour, like a Catalan tortell but simpler, more honest. The pears roast until their edges catch and caramelize, then nestle into the batter like they grew there. My grandmother would have approved: she never met a cake that couldn't be improved with more olive oil and a handful of nuts.
