Method
Dice the onion finely. In a large Dutch oven over medium heat, warm the olive oil and soften the onion until translucent, about 8 minutes.
Grate the tomatoes directly into the pot (or finely dice and add). Cook the sofregit until the tomato has deepened in color and the oil separates, about 10 more minutes.
Pound or finely chop the 4 cloves of garlic and add to the sofregit. Cook 2 minutes until fragrant.
