Method
Gather all your ingredients and tools: measuring cups, measuring spoons, mixing bowls, stand mixer, rubber spatula, and a 9-inch round or Bundt cake pan.
Preheat your oven to 350°F (175°C). Ask your adult helper to do the oven stuff!
Grease your cake pan really well with butter or sunflower oil and set it aside.
In a medium bowl, whisk together all the dry ingredients: flour, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set it aside — this is your spice power mix!
In the stand mixer bowl, add the softened butter and white sugar. Beat on medium-high with the whisk attachment for 2-3 minutes until the mixture looks light and fluffy like a cloud.
Peel the banana, break it into chunks, and add it to the stand mixer. Beat until the banana is mashed and mixed in — you should see little banana swirls!
With the mixer on low, alternate adding the dry spice mix and the whole milk in three additions, starting and ending with the dry mix. Mix until just combined — don't overmix!
Ask your adult helper to carefully place the pan in the preheated oven and set the timer for 40-45 minutes.
The cake is ready when the top is golden brown and a toothpick inserted in the center comes out clean.
Adult helper removes the pan from the oven. Let it cool in the pan for 10 minutes, then carefully turn it out onto a wire cooling rack.
While the cake cools, toss the pecan halves with the brown sugar and sunflower oil in a small bowl until the pecans are lightly coated and sparkly.
Spread the sugar-coated pecans on a small baking sheet. Adult helper places the sheet in the oven at 350°F for 5-7 minutes, stirring halfway through, until the sugar caramelizes and the pecans smell AMAZING. Adult helper removes from oven and lets cool completely.
Once the cake is fully cooled, sprinkle the caramelized pecans over the top — go crazy, pile them on!
Slice, serve, and watch everyone lose their minds over the pecan-spice magic!

Cooking Temperature
Oven must preheat to 350°F (175°C). Bake cake 40-45 minutes until toothpick comes out clean. Pecan topping requires 5-7 minutes at 350°F until sugar caramelizes - monitor closely to prevent burning.
Cross Contamination
Thoroughly wash stand mixer, bowls, and utensils between uses. Pecan topping creates allergen residue - clean all surfaces and tools before preparing allergen-free versions.
Storage
Store finished cake in airtight container at room temperature up to 3 days, or refrigerate up to 1 week. Keep caramelized pecans in sealed container separate from cake to maintain crunch and prevent moisture absorption.
Allergen Warning
This recipe contains milk, eggs, tree nuts (pecans), wheat, and gluten. Always communicate allergen information to guests and never serve without disclosing all allergens present.
Handling
Adult helper required for oven operations - placing pan in hot oven, removing caramelized pecans after toasting, and any hot pan transfers. Child should handle mixing, assembly, and decorating only.
Equipment Safety
Secure stand mixer to counter or use anti-slip mat. Ensure bowl is properly locked before operating. Keep fingers clear of whisk attachment during use. Never leave operating mixer unattended.
Pro Tips
Technique
Mash your banana until it is basically a smooth paste — you want those little banana swirls visible throughout the batter so every single slice tastes like cozy spice paradise!
Substitution
No pecans on hand? Walnuts work amazingly, or for a nut-free version, try toasted coconut flakes — they get caramelized and crunchy just like the pecans do!
Storage
This cake actually gets BETTER the next day as the flavors meld together, so feel free to make it ahead and store it wrapped at room temperature for up to three days!
From the chef
Okay, real talk — I literally dreamed about this cake one night, woke up Saturday morning, and knew I HAD to build it. The moment those bananas hit the batter, my kitchen smelled like autumn threw a party and everyone was invited. And those caramelized pecans on top? They are the ultimate showstopper that makes everyone stop mid-conversation just to stare at the cake. This is the dessert that turns a normal Tuesday into a flavor adventure you will be talking about for weeks.
